Sword Of Vermillion (Genesis) gets my vote. After taking months finishing Phantasy Star II on the Genny back in 1990, I was expecting something more out of Sword Of Vermillion (even as an action RPG). I beat the game in 2 days and wound up returning it for something else. I'd kill for a harder sequel though ;)

Final Fantasy: Mystic Quest: I don't think I even died once in either two of the times I played through the game.
Strider 2: Way too easy, should've been more akin to Strider 1 in level design and the way the sword was used. Still a blast though.
Super Mario Bros. 2: Took me forever to plow through the first and third ones, which amazed me when I had already run through this thing two days after I got it when I was 8.
Gungrave: Not SUPPOSED to be hard, but playing the third level and trying to get the larges beat number is the greatest :D
There are plenty more, I know, but can't think of any off the top of my head. It's late, mebbe more later :)

What's with you people? OF COURSE Jaws had an ending.
Collect shells, go back and forth between piers to power up, bring Jaws's energy down, then stab him with the boat. Plane flies into the sunset, the end. You can beat it in about 15 minutes... kinda RPG-like. Random battles, collect shells from dead enemies as experience, then go to the piers to level up until you can easily kill Jaws. Good game.
Super Metroid is too easy, by the way. Incredible, but too easy.

Streets of Rage was also easy, as were Sonic 2 and 3.

Of COURSE it's too easy; it was made special by Square for us retarded Americans. They even called it FF USA in Japan. It burns my eyes! The goggles, they do nothing!

Oh yeah, Super Castelvania 4 was very easy. Wonderful game...

I watched my friend win three rounds of kabuki warriors for x-box by smashing the controller into his rear end. Was inspired by a review. Its nice to see they are making video games for the blind and deaf now.

I'll add Parappa tha Rapper, for the PSX to the list. Easy and super short. I realy dug the visual style of the game, too bad there wasn't more substance.
I haven't played parappa 2 yet, but I get the feeling that it's alot like the first one.
