I'd kill for SF4 with high res 2D graphics and SF3:TS animation.
I do see that Fighters don't get the same treatment that they got in days gone by, but this is both a good and bad thing at the same time.
What we do get, for the most part is good, and we are not inundated with all the pure crap (Time Killers ring a bell?) that we had when 2D fighting was king in the arcades.
Still I wish there was more coming out, or yearly updates from Capcom, not just Playmore. I mean I personally don't care much about graphics, but it would be nice to at least get a completely redrawn KOF. And if SvC or SS5 reuse sprites like KOF2k2 did, I'm going to be relatively pissed.
I'm pretty excited about SC2, as its one of the few 3D fighters I really enjoy. VF4 and Tekken are good, but just aren't my style, I want my 2D fighters. But as far as evolution/innovation goes, I gotta say that things are evolving slowly.
Refinement sometimes can go un-apprecaited, but the evolution from SF3 to SF3:TS can be seen. And I think if you wanted to play CvS2, then SF3, then MvC2, then GGX2, then KOF2k2 you can tell the variety and differences offered by the genre.
And as far as innovation goes, I think that Playmore has innovated a lot with how May Lee and Angel play in KOF. They're pretty different from the way most 2D fighting characters are played, and while I'm still picking them up, I think they are a worthy addition. Parrying and Just Defense were also fresh new ideas that have been incorperated into the newer fighters like CvS2, and hopefully will be elaborated upon in the future.
Either way, when games like MvC2 and CvS2 get ported from DC to PS2, XBox, and even GC in CvS2's case, you KNOW it has to have made them some decent cash to invest more into it by porting it. I just hope that they come out with something really good of SF3:TS or SSF2T caliber in the coming years.

Wouldn't Kung Fu Chaos fit that bill perfectly? I've never tried it, but it looks alot like Super Smash Bros from the videos.
