I almost always sit down, except in tourney play. Everyone always stands then, unless it's just a casual weekly tourney.

Both types of cabs are fine, since you can just use different height stools... I guess this means I'd vote 'sit-down', eh?
I find that I'm a little too tall for a lot of stand-up cabs and have to crouch a bit, so being able to sit on something makes things easier.

sitting, except for fighters, where standing is better.
I don't really have a preference but it seems like I can concentrate better standing up. In a 1-on-1 versus (ie. fighting game) competition I'd rather stand.
Since the best reason to go to an arcade is the racing games, it's all about sit-down.
I always sit down regardless. Stools for the tall cabinets and seats or whatever for the sit downs.
I really liked the head to head cabinets they use in Japan too. Trying to squeeze next to somebody in a crowded arcade on an undersized cabinet just sucks. I can't press their taunt button anymore but oh well :)
Depends on the game and the type of "Sit Down" that it is.
Red Baron sit down, for example, rules.
Tempest sit down, while not bad, isn't preferred over the stand up.
I prefer the stool + stand up gaming technique. ;)

Standing up is the most awkward thing ever, considering my wrists hurt after a mere 20 seconds of playtime. Awful.
Standing up, except for racing games (or the old Star Wars games). I hate using stools, and it makes you look lazy when you're the only one using a stool among a bunch of guys all standing. Plus, I just can't really use a stick sitting, not sure why.
