Monitor has nothing to do with it, but as for playing with a kb/m, that's like saying one prefers Gunstar Heroes over Jazz Jackrabbit with a keyboard just because you're biased to gamepads. I haven't played cart racing games because none have felt worth my money. They're interesting, sure, but I don't normally play them and I don't know anyone else who does either.
Also, as was said before, shooters can always be gone back to so you can do better (and in StarFox 64, there was a whole other difficulty and extra multiplayer modes to unlock if you went back and did well), and they generally appeal more to those used to the oldschool "improve your score" players. Epic adventures are generally beaten once and never played again.
