What are you going to use the Mac for? I'm guessing it'll be something to do with music. If so, a Dual G5 is nice, but a bit overkill. Hell, so far I've heard there's hasn't been an app yet that can max out any G5 system.
For RAM, get Crucial. We use that stuff at work; much cheaper than Apple's own brand, and you never heard problems about it later in the computer's life. www.crucial.com is the website - you can search by manufacturer, model, and specific computer type, and they match you up with exactly what you need. Shipping from the site is free, too.

I'd say any G5 should do. The 1.8 and Dual 2 G5's support up to 8GB of RAM. Again, overkill considering PhotoShop, Final Cut Pro, et al. aren't that bad of resource hogs, but it's nice to know you can go that high.
If you want to go fr a Mac, but are looking at price too, I'd say aim for a 1.8 G5 + crucial ram + PC monitors with DVI -> VGA adaptor. If you have the extra money, go for the Dual 2GHz G5.
