I choose Street Fighter Alpha 3 when I want to have fun and Third Strike when I want to go deep. Garou and the first Last Blade and SNK Capcom: MOTM on the Neo-Geo Pocket all get honorable mention, though I have never played the latter against a human opponent. All in all, give me any of the top-level Capcom or SNK fighters and I will play happily for hours.
