Eternal Champions for Sega CD was pretty bad ass on the gore front.
Damn, S and L are on opposite ends of the keyboard.
I rather enjoyed Sword of the Berserk, with 35% more blood for the American release! And who doesn't love cleaving enemies into pieces?
Silent Hill 3 wins.

The Metal Slug games have the best animated gore. Those octopus things just ooze all over the place.
Forgotten One from LoI was indeed pretty gory.
I think the winner here is Soldier of Fortune 2 (PC version). You can take out your knife and artistically cut up heads in single player, bit by bit.
Not to mention the nasty things you can do with every other weapon in the game... hitting someone in the gut with a shotgun and watching their intestines fall out with a big hole in it... that's pretty gory shit.
Manhunt is pretty damned gory. Stabbing people with glass shivs, asphixiating them with plastic bags, using baseball bats to go deep with peoples brains....
