Midway Arcade Treasures and Namco Museum (1-5 & Encore) are the best ones I've seen. As for the Nintendo Pac-Man, I agree that was a faux pas on their part considering Namco has PMC out. Rereleasing PMC as a Players' Choice title while leaving the NES Pac-Man port in Japan would be a much better move.
Some of these NES classics that are arcade ports do need help. Where's the cement factory in Donkey Kong? Even the Atari XL/XE version has it, so Nintendo lacks an excuse especially when they're asking for a Jackson for just this game.
Nintendo should consider doing Museum format carts with several games a piece for $20. An obscene number of NES games could be crammed together into a 32 Megabit cartridge. While it's their decision, the choice they have made is highly questionable.
