Breakfast Bagel - The TNL cookbook
Hey guys, this morning I woke up early and made a breakfast bagel. It was good, and looked good so I decided to make a post about it. But not just any post, this one has pictures. MMMMMMM... Post pictures of the food you've made! Make these bitches jealous!
Best Damned Scrambled Eggs ever
Sorry, no pics for this one. Best scrambled eggs ever (warning: not low fat!):
4 eggs
2~3 cups of grated cheddar cheese
pepper
salt
heavy cream (or half and half, or whole milk)
lots of chopped chives
Crack eggs into a mixing bowl, whip thoroughly with a fork. Add a pinch of salt and as much pepper as you like. Pour in some heavy cream/h&h/milk (say about 1/2 a cup of heavy cream). Add 1 cup of cheese. Heat a non-stick skillet up to medium-low~medium heat. Pour egg mixture into pan. Using non-stick spatula (flipping kind, not stirring kind), rake through the mixture (basically, hold the spatula upside down and push back and forth like a rake very slowly). This will break up the eggs as they start to cook and allow the raw egg to get to the heat in the skillet while pulling the semi-cooked egg up a bit so it doesn't over cook. Then keep doing this for several minutes until the eggs start to look like scrambled eggs. When the eggs still look moist (but no raw egg liquid is still in the pan), take the pan off the heat. Carry-over heat will finish cooking the eggs. Sprinkle some more cheese and chives on top of the eggs, let them sit a minute or two to melt the cheese, and chow down.
