The art of carving fruit and other foods is quite ancient. It was originally kept secret by those in the dynasty, but I guess the schools are much more open now. But only females get to learn the art. And ive seen some works that destroy the ones on that site.
There was a fruit artist at my parent's wedding, I remember seeing pictures of it a few times. It's not that crazy of an artform, and as mentioned, it's really old and often very crazy-good.
