The only way to have her back would be to have her in a couple of Wolverine's flashbacks in between fighting and tracking down Sabretooth. If you bring her back from such an awesome death sequence this movie is instant garbage.

But if there were a flashback, then it wouldn't make sense that he didn't know who she was in X2.

They should have him battle it out with another subject from the Weapon X project (which I recently learned should be said 10, not X). Sabretooth is probably out because of his involvement in X1 (he was lame in that movie anyway). Which leaves a large hunk of fucked up and angry mutants
