yeah, carpaccio! thank you. "tartare" didn't sound right to me, but i didnt suspect there were too many raw steak dishes out there.

I don't buy cheap pieces of meat, like T-bone. It's Rib-eye or nothing at all. I cook my meat medium well (medium levels of heat for around 30 minutes) and I select a piece of meat that is well marbled.
I marinate my meat in Worchester sauce, so the level of juicyness is maintained. Once I flip my steaks, I pour the remaining juices onto the steak.
Most restaurants can't provide a decent piece of meat, well done, because they try to cook the meat at a very fast pace. That's why most well done steaks, are the equivalent of eating a shoe.

I like medium to medium well. Honestly I know it butchers the taste and whatever but I'm a big puss about rare meat because I got sick off of a hamburger that was too rare when I was younger. Food aversion psychology and all.
