Still, hate crime laws are getting pretty strict in this country. A racial attack carries far harsher sentences than if you were just pissed at someone.

Well most hate crime statutes that I'm familiar with take an enhancement approach to the crime. Crimes typically have three parts. All three must be shown beyond a shadow of a doubt.
Harm - the ass kicking
Causation - he kicked your ass
Mens Rea or Evil Intent - He kicked your because you are black
Hate crime enhancements typically land on the mens rea, if the prosecutor can make a showing to a jury that a person's kicked another person's ass solely because he was black, hate crime enhancement kicks in. You cannot simply say he did x because of y, without some evidence like witness testimony. Now a ballsy prosecutor can try to get the enhancement when the evidence of a hate crime is only present because of the person's race, but that means they won't present stronger evidence that the battery took place because he was after money, revenge or some other motive.
But he risks his entire case like this, you need to show all 3 elements otherwise the defendant walks.

I think it would be interesting to see if anyone could come up with an offensive word to describe white people - very challenging, but I'm curious to see what other people would come up with.
Yeah, but that's not offensive. What's offensive is it being used as a term for hate. And saying "Hey, I don't like that" will only encourage people that hate you.
