Also: a guy came in and thought the pizza was so good he set up a meeting for tomorrow with his wife who's a wedding planner. $$$. He also wants to give me a whole set of kitchen knives his uncle passed down to him - said he doesn't use them. Apparently they're 70's Sabatier stuff. EXPENSIVE.

you should talk to this guy. I bought food from his truck all the goddamn time. The food was indeed great but the thing that really kept me coming back was he remembered my name and was always friendly to talk to. Even after months of not being there when I was out of school.

Anybody can make bbq. Not everybody can make great bbq that'll keep people coming back.

There's no great mystery to BBQ as much as pitmasters would like you to believe that. It's poor people food created out of necessity and ridiculously easy to make. Just make sure your fire is between 250-275 for many hours till it's fall apart like. I already have an amazing cola BBQ sauce, I just need a mustard one and a tomato one.

I made an impressive BBQ rib and Chicken at the school. Beat out about 10 other competitors. Its really all about the sauce ... low and slow. The dry rub helps imo.

The best burrito I've ever had comes from a food truck/cart. Shit is fucking amazing. You should also write a cook book.
