Most chefs/cooks I know don't eat particularly well. For example I'm having a wonderful dinner of Ovaltine right now.
I mean I could go in the kitchen and whip something together, but I've been doing that for 10 hours already today.
If I had a specialty it wouldn't really be a cuisine; more like using very limited ingredients for a great result. Stuff like Fettucine Alfredo made out of whatever's on hand.
Sounds kind of like authentic Italian. Let great ingredients do the work, not the process (like the french).
I think over the past two years or so, I have slowly stopped using formal recipes for cooking. I never have half the stuff required, anyway, and I hate buying something unless I know I'm going to use a lot of it. I keep my pantry full of rice, beans, canned tomatoes, spices, and baking goods, and I have what I need, and I don't have much that I don't use often.
Baking, however, is a completely different matter. I don't fudge with the recipes much, unless it's adding nuts or something. Most baking is simply too dependent on proportions and such to guess. Outcome is 30% following instructions, 20% quality of ingredients, and 50% knack/finesse/feel.
I need to start baking. I know I could do it, but I just never do it. I don't know why.
I also don't really follow formal recipes. I do try and check out the ingredients, I just don't follow the measuring all that much. I do know if I bake I have to follow it verbatim.
