So my fiancee and I have been on a cooking roll as of late. The only thing we made that didn't turn out to well was homemade Calzones. I can't make dough worth a shit, any suggestions on making good dough?
Try using a bread dough recipe instead of a pizza dough recipe. Seems to come out far superior that way.
Should I be using a high power mixer or what? I jusy use a small hand mixer
When the dough is so sticky that it almost sticks to your hand, it's perfect for calzones. As far as the mixer goes, try what you've got first. If that doesn't work, invest in a Sunbeam mixer that has higher speeds. I think everybody should have a good mixer in their kitchen anyways. :)
We don't have alot of counter space, but we have alot of cabinet space, so it makes up for it. I don't like alot of clutter anyways, so most of the appliances sit in the cabinet until I need them.
My Crock pot is under my counter. I use that a ton. Throw shit in around the morning, come home from work and a nice Stew awaits. YUM!
Also, I think I will invest in a mixer. I need one of those and a fryer. Oh and a nice Coffee Burr grinder.

Ok this is how my restaurant does it.
This recipe yields an entire commercial mixer full of dough so you're gonna have to tweak.
1 bag of white flour (you will add scoops as it mixes until it is sticky, but consistent and pliable)
22 quarts warm water
1/2 gal vegetable oil (or olive oil for a small batch so expensive!)
3 cups sugar
1 1/2 cup salt
4 oz yeast
You can mix it with a wooden spoon fo reals if u don't have a mixer. It will just take a while. Once you make the dough I will give you further instructions. It cannot be used immediately.
