Having cooked anything to use it yet, doing fajitas tonight. I've got it written down and ready to rock though.
In that case here is an awesome addition to any latin dish. It's simple and amazingly delicious. Just don't cook it. Eat it cold with chips or top your already prepared fajitas or tacos.
black bean, corn and pepper salad
1 can black beans - drained and rinsed well
1 pkg frozen corn - thawed - i like white sweet corn
1 green pepper
1 red pepper
1 jalapeno - seeded
bunch of green onions or 1 red onion
parsley
2 T olive oil
3 T lime juice
salt and pepper to taste
directions - chop peppers,parsley,and onion - mix everything together
I think second-day steak would be a perfect opportunity to try making a new sauce. Or, maybe topping it with bleu cheese. Unfortunately it will never live up to its first day, so might as well try something new/different the second time around.
I'm totally ok with eating leftover steak cold with A-1.
