Ha! You don't even know the half of it. I'm a pepper or hot sauce (Tabasco preferred) fiend. You name it, I've used them on it. I should take a picture of my desktop...and kitchen Hot Sauce cabinet.
Pepper and Tabasco for American dishes: Pot roast, burgers, pizza (no pepper), grilled stuff, etc. I don't use either for Asian food though, that's reserved for the red chili sauce. Mmm.

Not true. But, I do use Sriracha on Vietnamese and Thai food. Here's the promised pics of my desktop with the hot sauce and pepper on hand, my kitchen cabinets of hot sauce (and I actually had three more bottles that I finished last month) and Asian seasonings, and my emptied peppercorn bottle:

I like Vosges chocolate, but the bacon bar isn't that special. Their goji berry and sea salt bar would be better without stupid trendy goji berries that don't add much. Salt and nice chocolate = yes. Candied bacon is going to happen here though, mark my words.
Sriracha is great but my favorite hot sauces are still Tapatio for general purpose and Cholula for chicken sandwiches. Both are great and easy to find. I like that red pepper in the weird short, thinner shaker they have at Japanese places, too. Can't remember what it's called and I don't have any here in PA, you can see it on the top left in one of those pics.
It's okay, nobody's perfect.
I added Cayanne once, it was really tasty.
As for the candied bacon thing, I think the combination of salty meat with sweets is really underestimated because it's rather gross and fat ass. I made a ham boiled in Coke and then covered in molases and brown sugar. It kicked ass.
Can't imagine it would be too different than that.
