Cooking TNL Part II

This Thursday I'm having people over for margaritas. What's the best way to make them? I don't want any pussy shit, just a straight up classic mix. Limes are going to be on sale at ten cents each, so any amount of fresh lime juice is possible. I'll probably get a mid-range tequila; nothing too shitty, but not Petron either.

The most solid looking recipe that I've seen is this one, and it seems the least gimmicky: "What I've discovered, through many long nights of experimentation, is that the best ratio for a Margarita is 3:2:1. Three parts Tequila, 2 parts Cointreau, and 1 part freshly squeezed lime juice."

Suggestions?

3:2:1 sounds about right. I don't exactly remember how I make my margarita's actually. I make them super fucking strong though, they'll fuck you right up.

*edit* Actually it's 3 parts tequila, 2 parts lime juice, 1 part quantro

I made a "trial" margarita earlier... it was goooood. 3:2:1 of tequila, triple sec, and fresh lime juice I can recommend. The brand of tequila I used is pictured. I also got a bottle of cheap stuff once I run low of this.

If you're ever in asheville NC and you think "Hey, let's go to that Indian place Mela. They're well reviewed." Be prepared for a fucking assault if the menu says spicy. Chicken Tikka Masala is a very middle of the road dish anywhere I've ever had it. At Mela it's hotter than any vindaloo dish I've ever tasted. IT was seriously un-fucking-believably hot.

lol. We have this shitty indian shop near us that gets the spicyness of each dish wrong. Everything is too mild bar the one vindaloo, which is too painful to enjoy (and i'm not usually a wimp with spicyness).

We've got a place here that serves primarily fried rice and curries. Their scale of hotness is like no other place I've ever been. I once made the mistake of getting something medium; I have a decent tolerance of hot food, but it was almost inedible. Mild plus is what I usually get now. I can't imagine what their "hot" is; I believe that sauce is made mostly with stewed habaneros.

I haven't contributed in awhile since we've been short handed at work. I've been having to handle breakfast daily and try and keep up with popular items in the dessert case. But we've got some new help and hopefully soon I'll get back to experimenting doing new things.

Anyhow, I fixed myself a nice lunch today. I'm not sure what to call it since I just kinda made this up on a whim. It's pretty much floribbean chicken stuffed with cilantro and pineapple, wrapped in spicy cayenne proscuitto ham. Underneath is just some stir fry noodles and vegetables and garnished with thin grated mexican cheese and my favorite green sauce to get it even hotter.

I like mixing hot and sweet and cilantro and pineapple make a pretty good combo.

I did some pretty good shopping. Few eggs, weenie tots, a HUGE canister of oatmeal, some bananas, and jello for $12. I normally don't eat much so I'll survive for a week and a half on this shit.

Also, I'm making jello shots for some lady friends tomorrow visiting my pad. Because of my bender, I have a small amount of vodka but a fuckton of gin. So my question: does gin make a good jello shot? And if so, how do I make a jello shot.
