I can respect and appreciate this to an extent. If I am going to a fine dining place I will leave things as they are for the exact same reason you mentioned, to experience the design of the dishes. I've been dissapointed more then I haven't so I usually stick to what I know I like and ask for things to be left out that I don't feel like picking out (nothing wrong with asking). I know of people who LOVE chicken marsala but HATE mushrooms so they ask for few to no mushrooms if possible, if it can't be done they will pick em out. This shouldn't be shunned upon, American or not... it just seems arrogant and inconsiderate to hold such high regard for your dishes although I understand the mentality. Perhaps I'm uncultured with no class but to me anything that will inevitably end up in the toilet shouldn't be held with such high regard, it's just food. I'm there for the experience of being out at a nice place to have a nice meal, not necessarily to allow the Chef to put on a show for me (unless I'm at a hibachi grill, then by all means spin the knife, roll the egg and light the onion igloo). Also, if I wanted to be a Chef I would do what I had to do in order to be good at it, so this stands no ground at all in the debate. I can easily say you couldn't do what I do... stupid right?

1) Take steak already cut and aged
2) Season
3) Throw on Grill, flip every 4 minutes.
4) Serve with premade sides done by morning cook.
5) Serve

But you couldn't do it like flavor flav here can.

On my last visit to Japan, my mother and brother went with me, and the very first thing we did after landing was go to an okonomiyaki restaurant with my wife's family. The final step in preparation is to cover the top of the okonomiyaki with both a brown sauce and mayonnaise, and at that step my mother said she didn't want the sauces put on. You don't not eat okonomiyaki without those sauces, and it drove me a bit mad that she asked for that, especially when just 24 hours earlier she had been giving my brother crap about how picky of an eater he is and how much trouble he'd have in Japan.

But, as much as I personally was against her decision, it's her decision. If she's going somewhere and she's paying for the food, she should have the right to eat the food in whatever way she can reasonably ask to have it. I'm at the point in my life now where I want to eat things the way somebody else has created them, because in doing so I've tried many wonderful new foods that I wouldn't have tried if I always demanded things my way. But it's my money, I'm the customer, I'm one of the people keeping that place in business, so if I don't want onions on my French dish then that restaurant should be eager to make me happy. Why am I going somewhere to pay people money to make them happy? Unless I'm down giving money to a local charity, that makes absolutely no sense.

Sure, I should want to try new foods and experience dishes the way that others have designed them. But, just because I want that, why should I force my way of thinking on somebody else? In a situation where a customer can have a choice about what they're buying, they should have the right to make use of that choice. It's like, to bring in a video game comparison, trying to sell me a copy of Street Fighter IV but saying that I can't change the button configurations or CPU difficulty or numbers of rounds in the VS mode or anything like that because that's the way the creator intended the game to be enjoyed.

I don't think any of you who think people should try food at restaurants the way they were intended to be tried are wrong in thinking that, I just think that, as a customer, if I want something the way I want it as opposed to the way it comes normally, I shouldn't feel bad for wanting that if my request isn't a huge inconvenience to the food preparation process.

(This kind of reminds me of my previous girlfriend, where, when I was visiting her in Japan, she scolded me for putting soy sauce on what was basically an eggroll before I had even tried it. You know what? That's what I wanted to do, so that's what I did, and being an adult and not her child, I had every right to do so.)

Who do you think butchers the steaks?
Who do you think makes the sides?

Also: It's about doing this with 55 steaks already on the broiler.

You can try and belittle me and act like my job isn't shit, but you're wrong. When you get burnt by an 1800 degree broiler while losing pounds of sweat while being screamed at and still holding it down everyday at your job you can act like my job isn't hard. You sit in a cushy office and don't do any real work.
