He's cooking for a general audience. He trains his cooks to put something out a specific way and when changes are made, the chance for error increases drastically.
If you don't like onions, you should try something without them or just take a chance, the onions are there for a reason. And people go WAY WAY WAY further than to request something with no onions. I swear to christ, I wouldn't be suprised if some asshole came into the restaurant with a recipe card to make something he wanted.
You're eating out and you're eating in somebody elses house. If you want to play chef go hire a private chef for your home and get him to make what you want and leave us the hell alone.
BTW, ordering something without onions may not be that big of a deal. There's far worse.
