I hate onions but I can tolerate shallots and I use them quite a bit. Josh, why don't you make some soup from the butternut squash? Just steam or bake it, add some veggie stock ( I would use chicken stock, but you know), simmer for 15 mins, puree and finish with a bit of cream, salt/pepper. Maybe a bit of chili powder and a smidge of nutmeg.

Seconded. Butternut squash is delicious... I like mine almost dessert-sweet. C1NN4M0N!!!1 and all that.

I have also made a similar soup with pumpkin that was delicious.
I'm thinking about roasting the squash with honey and olive oil, although that soup sounds really good too.

Last night my girlfriend and I made mushrooms stuffed with cheese, shallot, tomato, and ham topped off with a few shreds of pamaesan, with roast vegetables seasoned with rosemary, thyme and sea salt, and a simple salad. It was fucking awesome
I'd go for the soup with the squash and fry the eggplant in a simple badder to accompany it for some crunch.
If you want to try an easy side with mushrooms put chicken rub/spice on them and some olive oil and roast them in the over for 15 minutes or so. They're great with something like flatiron steak, icarus. (obviously steak and mushrooms marry well)
The soup was SO GOOD. In my electric wok I cooked up about 1/2 cup of diced red onion in 2 tbs of salted butter until it was clear, then added 1/2 a small butternut squash cut into very small cubes. I cooked this, covered, over medium low heat for about 10 minutes stirring sometimes. Then added 2 cups of vegetable broth, covered, increased heat to medium and boiled for about 15 minutes. Removed squash w/ slotted spoon, and puree, then stir slowly back into liquid until desired consistency is reached adding nutmeg and a small amount of cayenne pepper. I topped it with toasted squash seeds.
This was just so fucking good I don't even know what to do. Thanks animegirl for the idea. I don't even like soup...
