Memphis style BBQ sauce go with maple, hickory, mesquite, sassafras, oak, or dabble with cherry and apple. It really REALLY depends on the sauce.
and I mean the dipping sauce. Make sure the dry rub has herbs that mesh well with the smoke chips. <- aka flavor profile melds well.
Also are you going wood chips, dust, or whole wood blocks? Chips are better btw.
