HAY GUYS!
I need, like, 300 feet of cat5 cable because I live underground and wireless doesn't fucking work. My apartment is 1200 square feet of big long fucking hallway.
Whats the difference between this and this?
Are either of those what I need? (I'll be streaming movies and music to the 360 and playing games on live. By games I mean Burnout)

Try to find yourself some Cat6.
It supports gigabit but more importantly is better shielded, which you'll need at that distance. Odds are you'll find it cheaper than Cat5.
They are both the same cable and would work perfectly for you. The difference is one is plenum and the other isn't which shouldn't really affect you at all. Plenum cable is made to make clean air if it burns in a fire so it isn't toxic.

Also. If my router doesn't support THE GIGABIT does it even matter? What if I purchase shielded cat5 instead?
I wouldn't worry about shielded anything unless you are laying directly on electrical wires or florescent lights. 300 feet Cat 5e shouldn't give you any problems if the cable ends are done properly.
