I don't have an Arcade-in-a-Box stick, but I do have a modded Virtua Stick High Grade stick that works on both 360 and PS3. The dual system mod performed on my stick should be similar to that of Arcade-in-a-Box's.

There are two PCBs in the stick, one that is a 360 Mad Catz Arcade Stick (the only 360 controllers at the time of this mod that had a common ground wire) and the other that is the PS3 VSHG. The switch you see on the side near the Sega logo determines which PCB is used. When connected to the PC, the stick is identified as a 360 stick or a PS3 stick depending on where the switch is set.
I don't remember. I bought a VSHG from NCSX before they sold out and had it shipped to the guy who would mod it. I think it came to around $200 with shipping charges. Here's the thread that discusses how to make one (assuming you can find a common ground 360 controller).
By the way, one of the guys (Toodles) who helped figure out how to make the dual system joystick work has made his own universal PCB (it doesn't work on 360, but you can piggyback a 360 common-ground PCB off of it). Here's the thread if you interested in the technical details.
I'm pretty sure this is what Arcade-in-a-Box is using for its dual-system joysticks, since Toodles consulted with the AIAB owner to make the joysticks work on the two systems via a switch.
A bit offtopic I had something similar like this from Lik Sang (could be play-asia also) for last gen, one arcade stick with like a switch hub to make it work on xbox-ps2 and it claimed to work for the gamecube also, but the latter didn't work, but it did work pretty good with ps2-xbox though. I need to check out play-asia see if they do have something in that direction for this gen also, if so any stick would work on that hub.
The AIAB stick actually uses a pre-Cthulhu PCB made by toodles that only does PS3/PC, I believe. The 360 pad wouldn't be piggybacked, but they would be connected like how akuma001 did your VSHG. It should be lagless for both systems in any case. The Cthulhu was made to be a UPCB Lite with less system support aimed for people that doesn't need all the bells and whistles of the UPCB at a lower price.
