No dice. The challenge description explicitly says you have to kill it with your melee knife.
I got attacked by my first bear when I was picking flowers of all things. I thought it was my horse at first, but the walking sounded really heavy. I turn around and this gigantic bear just slaps me down like a red headed step child. I managed to blast it with my shotgun but got jumped from behind by another one.
Lassoing people never gets old. I'm constantly amazed by the animation in this game.
I like shooting oncoming traffic. Shoot the horse in the leg, shoot the rider and see the ragdoll effect.
I like going fast in wagons and then bailing out, especially to start missions.
