Yeah, The Witcher was a game using a 5-year-old engine that wasn't well suited to the design they were going for. I feel like a lot of its shortcomings are owed to that fact.
The new engine they're using looks pretty amazing. Although it could stand to handle clothing better, but for the most part it's really the prettiest RPG going.

So do you think this is a game that, with all the purdy textures, will show a difference between 1gb and 2gb of video ram?

The recommended is 1GB, so likely not.

Since when do the recommended specs represent the max that the engine can utilize? That would make for a pretty shitty recommendation. If anything, the recommended vram being that high gives me hope that I'll see a difference for once.

Recommended specs are generally the hardware needed to run the game on the highest settings. As opposed to required specs.

There's no way I'm watching any of those. My policy is that I watch videos until my mind is made up on whether to purchase or not. Once I know I'm buying something, I don't want it ruined at all. Hell, I can't even decide which game to play first on Tuesday. It probably will literally come down to whether the UPS guy beats the Steam unlock.

Confession: I only skipped through one of the trailers since I am also insane when it comes to that stuff.
If you're on the fence, the consensus is that the Hope video is the one to watch.

Some of the Witcher 2 trailers are built around little frame skits that aren't even from the game though. They're neat and don't spoil anything.
This game looks beyond great. There's a lot we don't/can't know yet, of course, but from what I've seen it would not shock me if this is the best RPG of this generation.
