Umami is a Japanese word that means "deliciousness" and is just an English placeholder for glatamines or glutamic acids. A better english word is just "savory". Unctuous if you're feeling pretentious.

I've done a lot of research on the subject and I have to agree. Specific synaptic reward system reactions similar to the neurochemical release in an infant's brain when breastfeeding. Naturally occurs in certain foods like mushrooms and certain seaweed.
