I believe you missed the point.
Suits or no suits, I'm not eating there because they say a great meal isn't about the food or wine, it's about the emotional experience. Is that so? Then I'll have a glass of water in my sports coat while you get the waitress to come under the table and suck my dick. Emotional experience: Achieved.
I'm all about getting philosophical with food, but only if the diner wants to. That kind of constant pretension is just too much to fucking bear.
You can look at my dirt/grass/beef dish and say "Oh, you're representing a field and you structured it so that the plate flows from earth to life biologically." Or, you can just say "Hey chef, this tastes good." Both are equally valid.
I'm not saying you can't tell a story or create art or emotions through food. Hell, that should be the goal! But saying it isn't about the food in the first sentence of your manifesto is asinine (which would be OK if they severed donkey meat). Topped with the statement about the enviroment, just adds to the ridiculousness! It would be like me saying a great film isn't about pictures and sound. It's about emotional experiences and nice comfy theater seats and everyone wearing sports coats.
A good film and a good meal should effect you no matter where you are.

Anyhow, enough with my disdain for Thomas Keller. Everything I've read and every interview with Noma and that Redzepi guy makes me really want to fly to Denmark just to eat there.
