A lot of restaurants, I always wonder how the chef doesn't get bored doing the same dishes day in and day out. Do you have a set menu to go with these, or is this the whole of the menu and you change it on a near-daily basis?

It's the whole of the menu.
This'll be the third total revision in as many months. Then we do anywhere from 3-5 specials per week.
We have a very short attention span.
If you look on the Owl facebook page we just added the Tiny Tasting as a bar-only option (pics there)
Then there are the events. We're doing 8 events in the next 2 months and 3/4 dishes is something new on those menus specific to the theme. Most are 4-5 courses, but one is 12.
The only chef in town whose food/restaurant I respect came in last night and ended up staying till 3am talking about how he wants to work with us on new projects - and that he's going to actively start sending his clientele our way.
