The other new thing we're doing is "fossilized" vegetables. Soak peeled veg in calcium oxide / water (slaked lime) and it creates a sort of hardened skin that stands up to cooking. So you end up with a hardened exterior and a soft inside - with a texture that's different from roasting and an appearance that makes it look dried.
Then there's kaolin clay. It's an edible clay that can be used to impregnate scents into food, or create a crunchy coating. We're exploring the applications.
And we're constantly researching using ash and char in foods.
