Icarus is right. I can get the same smoke flavor from a metal oven, just have to turn that sumbitch up.
Its the sauce. Some places add sugar to the sauce, others use Basil to flavor the sauce, and even other just use oregano.
I never said anything about smoke flavor. Brick ovens get hotter (or more evenly hot?) than metal ovens and the result is different.
I've had some very, very excellent metal oven pizzas mind you, but the result is just different.

There is absolutely smoke flavor. Ever sat in front of a campfire before? Notice how your clothes reek after a mere 5 minutes of it? And don't tell me you get the same smell by setting your pants on fire.
wood smoke will have an impact in taste.
Though if that is what people are tasting, and they like it, is neither here nor there.
I do that all the time.
