Most of the best stuff has already been listed but Donkey Kong Country Returns is pretty great too.
And if you don't already have a Gamecube, get F-Zero GX.

There's quite a bit of waggle in that game...
It's not egregious waggle, though. Shaking the controller because you're shaking an enemy/object? I can deal with it.
