Yeah, any heavy UI doesn't work at all, they have to be completely rethought for this. Skyrim is said to be completely unmanageable the way it is stock. There's a game where you fall through levels (like sky diving) and getting text to show up legible was a real challenge. It would completely ruin the immersion and make people's eyes hurt.
I don't think many people will be able to handle a face paced fps with this. It's a whole new world of game design challenges.
The best UIs for the rift i've used so far are very minimal ones that float in front of you. Currently, 99% of the stuff available is homebrew, so it will be interesting to see what real designers come up with.
For motion sickness, general movement seems fine to me, even the roller coasters or games with huge drops are of little issue, What really seems to induce it is taking control away from the rift for looking around. Having high sensitivity on the right stick or having a static viewpoint despite moving your head around seem like the worst culprits. Funnily enough, i only really felt sick in a museum simulation.

Fucking with people's vision would be half the fun of developing for this.
Certain objects could be visible to just one eye, or look different to each eye.
Perspective could be completely messed up, making foreground objects look impossibly large, or occluded in a way that confuses the eye.
The image displayed to each eye could even be completely different, like a map screen that only shows up on one side.
You could have dynamic FOV, or reverse the direction of the head tracking.
The possibilities are endless.
