Skyrim - Riften (lake outside)
In terms of fall settings with changing colors of leaves and whatnot I don't think there's a better example of the season in Skyrim than the area outside Riften, unless there's an area I haven't explored yet (only found 200 of the supposed 350+ locations)
Instead of creating a new environment thread on these boards, I decided to spare the fine denizens of tnl and update an old one.
Anyway, The Vanishing of Ethan Carter times one thousand billion. This game is a beauty.

The Witcher 3 has been awing me on a regular basis. There have been dozens of times I've crested a hill and paused to take in the view of the valleys, villages, rivers and lakes below, especially at dawn/dusk.
Everything in Dustforce. Pretty minimalism.
Flashback: the Jungles of Titan (first level)
Anything in the Bioshock trilogy
All of Journey. All of it.
Great call on Witcher 3. The vistas are unbelievable. I think the lighting is best at dawn, especially around White Orchard and Velen. I actually played the majority of the game between the hours of 5-6 AM in game time, simply because of that lighting. Whenever I remembered to, I'd reset the clock to 5 AM.
Witcher 3, anywhere you go. The early Wandering in the Dark quest with Keira takes you through some nice underground ruins, and the magic shield she throws out to protect you from a Wild Hunt freeze spell has some amazing special effects. Going through the world in a rainstorm with trees blowing is well done also. Even taking a boat out for a simple journey is a big thing thanks to nice water effects.
Cyber-Lip (NG): Fighting Terminator clones in a post-apocalyptic ruined NYC in the first stage, with even the Statue of Liberty tasting the enemy's wrath.
Strider 2 (arcade/PS): The high society area of Hong Kong, a downtown scene with flying vehicles that you fight on top of as skyscrapers zip by in the background.
Absolutely Witcher 3. It has been a long time since I just stopped to look around and check out how amazing the design of
a game world is. One of the most impresssive achievements in game design ever IMO.
