I always say "Good morning!" no matter what time it is. Easier for me, and messes with other people. I also enjoy saying "Have a fun!" when customers leave, which I originally did by accident (I attempted to say "Have fun" and "Have a nice day" at the same time).

Alot of times, when I hold the shift key to capitalize a letter, I hold it down too long and the first two letters come out capital. And I leave it there. I also think of old jokes or stories and bust out in laughter, causing people to give odd looks.
