Best fighting game for the Xbox?

First, know the audience. The purpouse of my game purchasing is to entertain with company. The company being construction workers, the people that built your house.

So far I have bought:

1. Halo
2. Fusion Frenzy
3. Project Gotham Racing 2

These have been a hit except for Halo. My friends mostly like to drive, so we played Gotham Racing most of the weekend after I helped my friend get his new piranhas into his tank. Our fingers didn't get bitten off, so we had a good time playing.

All I need to be a hit at our parties is a good fighting game. I should get one before or just at the start of Feburary as this is when crawdad seasons starts and I plan to bring the Xbox to the fourth annual crawdad eat. I mention the purchasing date as this could have an effect on the answer if a new game is coming out in Feburary. In other words, perhaps I should wait to buy a fighting game until a certain date, which hopefully will be no later than the middle of Februrary.

Any suggestions?

Well considering how your friends like simpler games, DOA3 is probably the best bet, or maybe Kung fu Kaos(but I have yet to touch that game).

It's got a 4 player tag team mode which is great when your playing with a group of people since it means less people having to wait to play.
