Oh man, the "floating bubble that cracks super easily" level in Earthworm Jim almost made me kill my friends when I was younger. I hated that level so much.

The water level in Burning Rangers, was pretty cool. The controls were frustrating at first, but after you got the hang of it, all was good.
The parts where you were in teh suit on Manaan in KOTOR were pretty terrible too. So goddamn slow, Jesus Christ.
Water levels have always been a pretty big bane on games, they're rarely pulled off well, either it slows the pace down to a standstill or they are incredibly tedious usually. The Water Temple in OOT is the perfect example. Iron boots? What the fuck were they thinking?

2) Water levels do suck, always have sucked, and always will suck. A good one that comes to mind is the one from Super Mario 3, but partly because it features one of the best video game songs ever. But that's about the only good one there is.
3) Mario 64 did every single type of level that can be possibly be done, and did it them all well. Truly a pinnacle of great level design. Now if only Sunshine wasn't the complete opposite.
