Not much, really. As far as I can tell, it just lowers the boss's health meter from 8 to 6 and makes some of their attacks easier to dodge. I haven't noticed any change in the boost meter or anything like that, but who knows. I can barely tell the difference between Sonic and Blaze as it is, so I wouldn't be the best person to ask about that.
