The only thing that sucks about chorizo is that it is super greasy. I have noticed that I cook a lot of Tex Mex nowdays.

When you cook it with the eggs just cook it longer than usual. The eggs will soak up the grease.

yesterday i made a whole bumch of Kielbasa with this recipe i found. I was so into cooking it that i forgot to make anything else. So I had this huge pile of kielbasa for dinner and nothing else.

Beer & Brown Sugar Kielbasa

1 can beer
1/3 to 1/2 box of brown sugar
Kielbasa!

in a pot simmer the beer and brown sugar mixture till all the sugar melts. Pour the mixture over sliced kielbasa in the bottom of a baking pan. Bake at 350 for 45 minutes. It helps to occationally open the oven and baste the kielbasa. It's a good idea to line the pan with foil and make sure the first thing you do when you take it out of the oven is to rinse the pan in hot water to get the sugar off. Otherwise the pan will get krispy kremed and it could be bye bye pan.

I love Keilbasa but it's really nothing more than a giant hot dog.

Make sure you eat it with some biscuits (home made buttermilk are the best).

Add a splash each of vodka and cream to any typical canned tomato soup. Hot sauce too, if you like it.

I made some Pumpkin Pancakes last weekend, they were great. Tasted just like IHOP's.
