  4. I have a microwave, a toaster oven, and a dual panini press.

    I do all the prep at my home kitchen. The pork is roasted for about 10 hours, chopped and pulled, olive oil is added and everythings chilled. The ham is a spiral cut Smithfield style ham I cut into batons. For service I microwave the meats for 30 seconds to knock the chill off it, it goes on the sandwich with the roast garlic mayo, spicy mustard, pickle slices, and Swiss. Then it's grilled on a panini press. Other sandwiches have a combined toaster/press approach.

    Pizza is handled by a toaster oven set to broil. Apps and desserts are cold. Salad, salmon rillettes, country ham and melon, cheesecake and creme brûlée. Will add a dark chocolate coconut cake next week. I wasn't thrilled with the recipe I had.

    It's making me think very creatively to make tasty food with nearly no equipment.

    The Cuban does sound good. Goes to show you don't have to have the most intricate menu to have good food.

  10. I even talked to rtificial about doing a series of YouTube videos and tackling different subjects every 'season' using shitty stuff everyone has. He didn't have the time. And I don't have the desire to do it on my own.
