Anyway, here's what's on the menu tomorrow:
Starter:
- Cut fresh cantaloupe, blueberries, and oranges
Main:
- Chicken Breasts, skin removed, and drumsticks; marinated overnight in a homemade honey-mustard sauce (brown mustard, honey, olive oil, minced garlic and onion, spices)
- Purple snap beans. I'm not sure how to cook these; I hear that the color goes away when they're cooked. I'll work on getting around that.
- Pan fried okra. Pretty simple, slice okra and fry it in a mix of butter an olive oil, I guess...
- Some sort of potato dish. I think I'll slice some potatoes really thin, with skin on, and bake them in a casserole dish with cheese, cream, and salt and pepper. I'll think it over a little more and work it out in my head.
Biscuits are also a possibility if I don't go buy a baguette. I bought buttermilk just in case.
3-4, including myself. I can't really afford any more than that. I think I'm a little more than 500 miles away.
My girlfriend and I made our own beef broth out of marrow bones, stew meat, onions, and some spices then had it with some rice noodles, super rare beef, basil and peppers, and god fucking damn did it kick ass.
Cooking with bones feels pretty hardcore too.
Try steaming them if you got the means to do it. Don't steam them too long that they lose their color. Then right after steaming shock em in ice water to stop the cooking process and leave you with nice colorful vegetables. (shocking means to place cooked items in ice cold water with ice in it to quickly stop after cooking. Good technique for use on vegetables).
Then when you meal is close to done, you can get out your beans and saute em olive oil, butter or whatever you feel to get em hot once again and add a nice shine and flavor.
My one friend I knew. His family ran a chinese restaurant and they would cook and cook chinese food. We'd go over to play Super Tecmo Bowl and the mom would ask if we wanted fried rice and lo mein. We always accepted. One problem though ... as you entered the home it felt like you walked through grease. We'd have to take our shoes off (respect) and if your socks were white? They came out looking black by the end of the day.
