The stunt tracks ARE trial-and-error. Think of it as a precision platformer. Use the respawn button if you fuck up, not the restart button.
edit: Which isn't to say you're not going to be restarting Race tracks a lot. Never really bothered me, what with the instant restarts + short tracks. And I love time attack modes.
edit2: One important thing to know is that you actually do have some control over your car in midair. If you launch into a jump while turning, you can stop rotating by pressing in the opposite direction of the spin. You can also use the brakes in midair to slow down.Yes.

Responding to myself, but-
So this is one of those games that gets better and better up to a point, and then turns obnoxious. The desert level car, for example, is just too wobbly to be fun, and the beach car can't turn. Don't even get me started on the crap design of dockside, and all the stupid shit they put use to clutter up the tracks. It's fun up to that point, but I'm really glad there's a few billion tracks to download.
