  1. Vegetarian Cuisine Thread

    Basically,my girlfriend is a vegetarian, and she stays over alot. We're sick of ordering in shit, so we've started to cook meals instead. Knowing that there are a few vego's here, I was wondering what your favorite meals are and how you make them.

    I made this one on the weekend and it rocked pretty hard.

    Eggplant Parmesan


    Ingredients

    3 eggplant, peeled and thinly sliced
    2 eggs, beaten
    4 cups bread crumbs
    6 cups spaghetti sauce, divided
    1 (16 ounce) package mozzarella cheese, shredded and divided
    1/2 cup grated Parmesan cheese, divided
    1/2 teaspoon dried basil

    Directions

    Preheat oven to 350 degrees F (175 degrees C).

    Dip eggplant slices in egg, then in bread crumbs. Place in a single layer on a baking sheet. Bake in preheated oven for 5 minutes on each side.

    In a 9x13 inch baking dish spread spaghetti sauce to cover the bottom. Place a layer of eggplant slices in the sauce. Sprinkle with mozzarella and Parmesan cheeses. Repeat with remaining ingredients, ending with the cheeses.

    Sprinkle basil on top.

    Bake in preheated oven for 35 minutes, or until golden brown.


    Its retarded easy and tastes wonderful.

    edit: I suppose you're barely using any, but still.

    Eggs are vegetarian (ovalactose). They're not vegan, though.

    I'll get some recipes up as soon as I'm done working tonight.

    Today I made:

    Fajitas

    One zucchini
    One yellow squash
    One carrot
    One red pepper
    One green pepper
    One yellow pepper
    One red onion
    one big fucking portabella mushroom
    One clove garlic (pressed)
    One vegetarian bullion cube
    Cayenne pepper - to taste
    Black pepper - to taste.
    One package traditionally seasoned setian - cut into strips
    Fajita wraps.

    Boil small amount of water and add bullion cube, garlic, black and cayenne pepper. Bring to a simmer add seitan and cover. The water should just cover the seitan.
    While simmering slice vegetables to desired thickness and stir fry over high heat with oil of choice in a wok or a large pan adding black and cayenne pepper to taste.
    Once onions begin to go translucent dump setian, and liquid into wok and continue stir frying over high heat until liquid has cooked down.

    For a side salad type thing I combined equal amounts of black beans, yellow corn, and diced tomatoes.

    I'm still at the "winging it" stage of cooking but these things went over well enough that I've made them twice in a week.

    Also: I've been having a REALLY GOOD TIME with the silk road cookbook. Its kind of expensive, but everything I've made from it has been bangin.

    These recipies, on the other hand, sound pretty good. I'll be trying some out soon. I am excited about the eggplant parm in particular.
