Do you guys eat use the stems when you eat/use cilantro? Because if you do I can understand why you say it overpowers. The leaves are much less fragrant and therefore not nearly as overpowering. Chopped up in guacamole they are simply an accent and you cannot taste them individually at all. The stems, which contain a ton of the oil flavoring cilantro, are excellent to use in a soup to add some cilantro flavor. You can bind some stems and pull them out after it has cooked. That way you get cilantro flavor without the leaves being in the soup.
Yeah, I never use the stems unless I am making broth for a mexican-style soup. That reminds me, I am making plantain soup which I am really excited about. I have never used them before, I'll have to come back with a trip report.
For my guacamole I usually just add salt, pepper, a minced clove of garlic, and a squeeze of lime juice to avocado. Sometimes I add a little cumin, but not always. I like to have my cilantro on the side so I can regulate my intake with each bite.
for burritos I use cilantro instead of lettuce. Haters can suck it.
