So for that steak last night I busted out the cast iron grill plate (the thing you put over the burner) and got my indoor grill on. Worked out well. Hadn't ever used one outside of a commercial kitchen.

My girlfriend gave me the American Culinary Institutes giant tome a couple of years ago for Christmas and I have just sort of stared at it in quiet intimidation ever since.
