  1. Pastitsio is really just Moussaka (OMG WHICH CAME FIRST) with pasta instead of awesome vegetables. If you're a fan of eggplant and/or zucchini, make Moussaka. If you're carbo-loading, make Pastitsio.

    Protip: use half ground lamb and half ground beef for the meat sauce.

  2. Flaming S'mores.

    One chocolate square. A marshmallow on top. A bamboo skewer through the top. Sprinkle crushed Graham cracker around the plate. Grate a little orange zest on everything. Pour a shot of American Honey whiskey over the marshmallow. Set the whole thing on fire with a brûlée torch.

    After the mallow toasts blow it out, swirl it around the plate and eat in one bite.

    We were slow last night and now there's a new dessert on the menu.

  6. I had an idea a month ago for a soup. I passed it by a few chefs and he let me make it today. The idea? A carrot cake soup and its not what you think. It turned out awesome. Its also vegetarian.

    Its a carrot consume; to those that don't know culinary terms. Carrot broth with ginger infused pasta. After eating it the chef agreed I should have made it tortellini and not angel hair. Then I could have filled the tortellini with cinnamon infused cream cheese.

  7. I'm experimenting with unsmoked bbq today. Rubbed a pork shoulder with salt, garlic, bourbon, olive oil, coffee, and red pepper. Gonna shred it up and make a sandwich.

    Might mix it with another thing. Asparagus, chorizo, and sous vide egg.
