Here is another appetizer from work on the current menu.

Eggplant terrine, Inside the eggplant outer is roasted red and yellow pepper, wilted spinach saute and goat cheese. Balsalmic glaze, basil sprig, micro greens and smoked maldon sea salt for garnish.

Yea I know right! heh. I'd rather not even have it on there, but I do as I'm told. Plus it was close to the end of the night and I'd used up all my small sprigs.

I'm going to work on a chocolate spaghetti recipe this week. I think I got the raspberry sphericals ready for a special I'm working on.
