    This Saturday I'm cooking for people. Hopefully something relatively cheap. Should I be fancy and stuff deboned leg quarters (per video below), or should I just marinate and grill them?



    Also, what should I accompany it with? Maybe a simple pasta? If I use marsala wine for a deglaced sauce (per the video above), I could also incorporate that into a pasta sauce.

    I'm going to give those stuffed leg quarters a shot this weekend. Instead of wrapping them in bacon, though, I'm just going to stuff them with spinach leaves and goat cheese, and finish them on the grill. It is going to be delicious.
