My new theory is that ultrasonic cavitation (those jewelry cleaning things) will rapidly extract flavor and aroma from anything added to a spirit.

It does work, but not as well as I'd like.
In old news: I retried "Hyper Infusion" with the iSi canister. This time I used honeycrisp apples and 50/50 charred applewood chunks. Instead of 20 minutes, I left it for 24 hours. It worked like a motherfucker! Perfect! You've gotta try it!
I also nitrogenated cider so that it poured like a guinness.

Just a Stone Arrogant Bastard Ale, but delicious nonetheless. The bomber is perhaps my favorite drinking quantity: Have one glass while I cook, and finish it off with dinner.
I was invited to a farm-to-table dinner hosted by Stone.
The chef doing the food runs a restaurant here called American Grocery that's all farm-to-table. It's an amazing place they run and they do phenomenal food. Should be a good night.

I never heard of that canister before but it looks interesting. You're not making foam, right? You release the nitrogen to pressurize the vessel and that's it? Is there anything else going on inside of it? And the canister will remain pressurized for 24 hours? Sorry for all the questions, trying for figure out how that thing works. If you made the apple thing with vodka I think you should try bourbon.
Make any good foams with it?
